But I've made it for Dave and I a couple of times for special occasions.<BR/><BR/>Basically, you take your duck breasts, with skin, heat a very small amount of butter in a large pan and fry the breasts, skin side down for say... 5 minutes... flip and do the same. This renders a nice amount of duck fat. Stick the duck breasts in an oven at 300 until they finish cooking to the doneness you prefer. In the pan with the duck fat, take some new potatoes that you cooked briefly in boiling water to soften, half them, and fry them in the duck fat.<BR/><BR/>OMG so good.<BR/><BR/>the raspberry coulis is beyond easy too... if I remember right.. was basically some sugar, whole raspberries, and Framboise heated and pureed.<BR/><BR/>Like I said, I'll post the complete recipe eventually. ;-)Leahttps://www.blogger.com/profile/08095177289743141701noreply@blogger.comtag:blogger.com,1999:blog-27386498.post-1159879086561655302006-10-03T08:38:00.000-04:002006-10-03T08:38:00.000-04:00Yikes!
